Abstract
Phenethyi alcohol has been found to be present in beer in quantities comparable to those of the common fusel alcohols. It has been found in all beers so far studied and in concentrations from 10 to 40 p.p.tn. It does not occur in wort and is evidently synthesized from phenylalanine by yeast in a manner analogous to the formation of fusel alcohols, as evidenced by Ehrlich's early experiments.
