Abstract
The reserve polysaccharide of the bran consists of almost equal quantities of mannose and galactose. The polysaccharide is not hydrolyzed by the saliva or pancreatic extract in vitro. Neither the whole fenugreek meal nor the polysaccharide of the bran causes a change in the blood-sugar. During germination, the mannose and the galactose are transformed into glucose, levulose, and sucrose. This publication has 1 reference indexed in Scilit:
