Bräunungsreaktionen von Pentosen mit Aminen

Abstract

When pentoses are heated in water with amino acids, or primary or secondary amines (neutral conditions) a complex reaction-mixture is obtained. From the low molecular weight compounds 4-hydroxy-5-methyl-2,3-dihydrofurane-3-one can be isolated. This methylene-active compound reacts further with aldehydes and ketones to give coloured substances e.g. those of structures 3,6 and 9. Erhitzt man Pentosen in annähernd neutraler wäßriger Lösung mit Aminosäuren, primären oder sekundären Aminen, so bildet sich in beträchtlicher Menge 4-Hydroxy-5-methyl-2,3-dihydrofuran-3-on. Diese methylenaktive Verbindung kondensiert mit Aldehyden und Ketonen (Zuckerumwandlungsprodukte) zu farbigen Substanzen der Strukturen 3,6 oder 9.
