Reflectance as a Measure of Pork and Beef Muscle Tissue Color

Abstract
Beef and pork muscle tissues were visually evaluated by a trained panel and then subjected to a reflectance measurement. Reflectance was observed to be a rapid, objective method of measuring muscle color and results in good agreement between visual panel scores and predicted values. The following prediction equations were obtained by combining data from 150 observations and two panels for each species. Copyright © 1969. American Society of Animal Science .
