Abstract:
Contamination of tuberous vegetables such as potato (Solanum tuberosum L.) with Cadmium (Cd) and Nitrate (NO3-) due to the imbalanced fertilization may pose health risks to consumers. Potato is one of the dominant agricultural vegetables in Iran which is consumed in different ways. Excessive amounts of Cd and NO3- in potatoes can lead to organ dysfunction and various diseases.
